EDMONDS PIKELETS


For those in America, pikelets are like small sweet pancakes that are made over here in New Zealand and Australia. Apparently, according to the Wikipedia gods, Pikelet is also a stage name for some muso in Aussie.
Anyway, they are little round patties of awesomeness.

2 eggs
1/2 cup sugar
2 cups flour
2 tsp baking powder
big pinch salt
approx 1 and 1/2 cups of milk

Sift dry ingredients together in a small bowl
Beat eggs with sugar until frothy and light
Mix altogether gradually
Spoon into a non-stick pan and cook over a medium heat, turn when they start to bubble as per pancakes. 
Makes enough for two adults and two littlies to stuff themselves. 
Serve with jam and cream, or lemon and sugar, or even bananas and golden syrup or maple syrup!
